Butternut Squash & Tomato Stars

Ingredients

175g peeled butternut squash, grated
100g cherry tomatoes, chopped
1 large egg, beaten
50g Parmesan cheese, grated (or vegetarian alternative)
25g Cheddar cheese grated
3 tbsp self-rising flour
2 tbsp basil, chopped

Method

  1. Preheat the oven to 180C Fan. Line a baking sheet with non-stick baking paper.
  2. Put the squash into a clean towel. Squeeze out as much liquid as possible then place in a bowl. Add the tomatoes, egg, cheeses, flour and basil. Mix well.
  3. Put a star cutter onto the baking sheet. Fill the star with the mixture and press down firmly. Continue to make stars using the cutter. You will make about 18 stars.
  4. Bake in the oven for 15 to 20 minutes until lightly golden brown and firm.
