Buttermilk Pancakes with Caramelised Bananas & Milk Chocolate Sauce

175g self raising flour
1/2 teaspoon bicarb of soda
pinch salt
20g caster sugar
1 egg, beaten
150mls buttermilk
150mls whole milk
40g butter, melted
1 small ripe banana, mashed

Caramelised Bananas
2 tablespoons sunflower oil
15g butter
15g brown sugar
2 firm bananas, sliced
15g butter
15g brown sugar
2 firm bananas, sliced
Chocolate Sauce
1 jar of Jim Jams Milk Chocolate Spread
Method
- Measure the flour, bicarb, salt and caster sugar into a mixing bowl. Add the egg, buttermilk, milk, butter, and mashed banana. Whisk together until smooth.
- Heat the oil in a large frying pan. Add large spoonful’s of the mixture to the pan. Fry for 2/3 minutes, then flip over and fry on the other sides for 2 minutes. Continue with the remaining mixture.
- Melt the butter in the frying pan. Add the brown sugar and banana slices. Fry until golden and caramelised.
- Measure 200g of Jim Jams chocolate spread into a saucepan. Gently warm until runny.
- Spread the pancakes with Jim Jam’s chocolate spread. Stack the pancakes and bananas on a plate. Pour over the warm chocolate spread and serve at once.
