Ingredients
100g buckwheat penne pasta
50g broccoli florets
30g sweetcorn
50g cherry tomatoes, chopped

Dressing
2 tbsp olive oil
2 tsp rice wine vinegar
1 tsp soy sauce
1 tsp honey

Method
- Cook the pasta in boiling water according to the packet instructions. Add the broccoli for the last 3 minutes of the cooking time. Drain and refresh under cold water.
- Put the pasta and broccoli into a bowl. Add the sweetcorn and tomatoes.
- Mix the dressing ingredients together in a small jug. Add to the pasta and toss together.
