Broccoli & Sweetcorn Fritters

A tasty way to encourage children to eat their veggies.

Ingredients
150 g Broccoli cut into florets
150 g Tin sweetcorn, drained
150 g Self raising flour
1 Egg (beaten)
1 tbsp Milk
2 tbsp Basil leaves, chopped
2 tbsp Sweet chilli sauce
75 g Cheddar cheese, grated
Freshly ground black pepper
Salt
1 Sunflower oil for frying
Method
  1. Steam the broccoli florets for about 6 minutes, then chop into small pieces. Blitz the sweetcorn in a food processor. Mix all of the ingredients together .
  2. Heat the oil in a large frying pan. Drop spoonfuls of the mixture into the frying pan and fry until golden, turning halfway through. When cooked transfer to a plate lined with kitchen paper.
