Broccoli & Cheese Tots

These broccoli and cheese tots are totally worth the fuzz! Will have the fuzziest of kids begging for another, and they are perfect to stock up and freeze.

Ingredients

Large baking potato about 350g
350g broccoli florets
1 egg, beaten
60g panko
50g Cheddar, grated
6 spring onions, chopped
2 tbsp plain flour
1 tbsp thyme, chopped

Method

  1. Pre heat the oven to 180 Fan. Line a baking sheet with non stick baking paper.
  2. Cook the potato in the microwave for 10 minutes until soft. Leave to cool.
  3. Put the broccoli into a steamer for 3 minutes, drain and leave to cool.
  4. Put the spring onions, broccoli, breadcrumbs, cheese, thyme, egg and  flour into the mixer. Whiz until finely chopped. Chill for 20 minutes. Put the remaining panko onto a plate. Shape the mixture into tots and roll in the breadcrumbs. Chill for 20 minutes.
  5. Lightly grease the baking paper with oil. Put the tots onto the paper and roll to lightly coat in the oil. Bake for 20-25 minutes, turn over halfway through the cooking time.
