Ingredients
2 tsp sunflower oil
100g onion, finely chopped
75g red pepper, diced
50g sweet potato, peeled and diced
100g minced beef
3 dried apricots, sliced
25g fresh spinach
200 ml weak beef stock

Method
- Heat the oil in a saucepan.
- Add the vegetables and fry for 2 to 3 minutes.
- Add the beef and brown.
- Add the apricots and stock.
- Cover with a lid and simmer for 20 minutes.
- Add the spinach and continue to simmer for 2 minutes.
