Ingredients
2 tbsp sunflower oil
200g sirloin steak, sliced into thin strips
3 shallots, sliced
1 large courgette, diced
2 cloves garlic, crushed
175g mushrooms, sliced
4 spring onions, sliced
400g rice

Sauce
2 tbsp hoisin sauce
2 tbsp soy sauce
1 tbsp brown sugar
1 tsp cornflour

Method
- Heat the oil in a wok. Add the steak and quickly brown over the heat, set aside.
- Add the shallots and fry for 3 minutes. Add the courgettes and garlic and fry for 4 minutes until lightly browned. Add the mushrooms and fry for 2 minutes.
- Mix all the sauce ingredients together in a small bowl.
- Add the sauce and steak to the wok and fry until heated through. Season well and sprinkle with spring onions.
- Serve with rice.
