Beef, Carrot, Mushroom and Kale Stew

This meat and vegetable stew is sure to be a winner. Packed with vitamins and iron rich!

2 tsp sunflower oil
110g celery, sliced
225g carrots, peeled and sliced
75g brown mushrooms, quartered
100g lean minced beef
3 sprigs thyme
200ml weak beef stock
20g kale
1 tsp tomato puree


  1. Heat the oil in a saucepan. Add the vegetables and fry for 2 to 3 minutes. Heat the oil in a saucepan. Add the vegetables and fry for 2 to 3 minutes.
  2. Add the beef and thyme and brown for 2 to 3 minutes.
  3. Add the puree and stock. Cover with a lid. Bring up to the boil, then simmer for 20 minutes.
  4. Add the kale and simmer for another 5 minutes. Blend to the desired consistency.
