Ingredients
2 tbsp sunflower oil
150g onion, chopped
70g red pepper, diced
50g carrot, peeled and diced
10g ginger, grated
150g minced lamb or beef
1 tsp mild curry powder
1 tsp turmeric
1 tsp garam masala
150g passata
150ml beef stock
15g mango chutney
10g soy sauce
350g cooked long grain rice
150g onion, chopped
70g red pepper, diced
50g carrot, peeled and diced
10g ginger, grated
150g minced lamb or beef
1 tsp mild curry powder
1 tsp turmeric
1 tsp garam masala
150g passata
150ml beef stock
15g mango chutney
10g soy sauce
350g cooked long grain rice
Method
- Heat the oil in a saucepan. Add the onion, pepper and carrot. Fry for 5 minutes. Add the ginger and fry for 10 seconds.
- Add the mince and brown with the vegetables. Add the spices, then the passata and stock.
- Cover and simmer for 20 minutes. Add the mango chutney and soy sauce.
- Add the cooked rice and mix well.
