Banana, Carrot, Apple and Raisin Muffins

This simple Banana, Carrot, Apple and Raisin Muffins recipe is packed with fruit and veggies and great to make with budding mini chefs. The addition of a little spice to the mix is a tasty way to introduce them to new flavours.

Ingredients

1 small banana, mashed
1 carrot, peeled and grated
1 apple, peeled and grated
150g self raising flour
50g caster sugar
½ tsp mixed spice
1 tsp ground ginger
50g raisins
30g ground almonds
125ml sunflower oil
75ml maple syrup
2 eggs

Method

  1. Preheat the oven to 160C fan. Put the banana into a bowl. Add the carrot and apple, flour, caster sugar, spices, raisins and almonds……Ingredients: 1 small banana (mashed), 1 carrot (peeled & grated), 1 apple (peeled & grated), 150g self-raising flour, 50g caster sugar, 1/2 tsp mixed spices, 50g raisins, 30g ground almonds.
  2. Mix the oil, maple syrup and eggs together in a jug. Add the wet ingredients to the dry ingredients and mix well……Ingredients: 125ml sunflower oil, 75ml maple syrup, 2 eggs
  3. Spoon into 12 cupcake cases in a muffin tin.
  4. Bake for 25 to 30 minutes until well risen and lightly golden. Cool on a wire rack.
