Baked Piccolo Cherry Tomatoes & Chicken with Mozzarella Cheese

This Baked Piccolo Cherry Tomatoes & Chicken with Mozzarella Cheese recipe is perfect for those cosy evenings in between Christmas and New Year. Get the family together and tuck into this delicious & warming dish.

Ingredients

1 large red onion, chopped
400g Piccolo Cherry Tomatoes, halved
3 large cloves garlic, crushed
4 tablespoons olive oil
1 teaspoon dried Italian herbs
4 Chicken breasts
Pinch dried chilli flakes
75g Grated mozzarella cheese
3 tablespoons basil, chopped

Method

  1. Pre heat the oven to 180 Fan
  2. Put the onion, tomatoes, garlic and 2 tablespoons of oil into an ovenproof dish. Season and stir together.
  3. Put the chicken in the dish. Season and drizzle with the remaining oil and sprinkle over the chilli and Italian dried herbs.
  4. Bake in the oven for 15-18 minutes, until the chicken is half cooked. Remove from the oven and heat the grill to medium high.
  5. Scatter the mozzarella over the breasts. Put under the grill for 10 minutes until the cheese has melted and browned and the chicken is cooked through. Sprinkle with basil.
