200g new potatoes
6 large eggs
2 tbsp milk
200g cherry tomatoes, quartered
25g frozen peas
4 spring onions, sliced
2 tbsp basil
75g Parmesan cheese, grated (or vegetarian alternative)

Method
- Preheat the oven to 180 Fan. Grease and line a 20 cm round fitted bottom cake tin with non-stick paper.
- Cook the potatoes in boiling salted water for 12 minutes until tender. Drain well and slice into slices.
- Beat the eggs and milk together in a mixing bowl. Add the potatoes, tomatoes, peas, onions, basil and cheese.
- Pour into the tin and bake for 30 minutes until set and lightly golden brown.
- Leave to cool for 10 minutes, remove from the tin and remove the paper. Slice into wedges.
