Apricot and Cocoa Energy Balls

Delicious energy-rich balls full of goodness. Perfect for a treat or snack on the go. They are really easy to make and freeze well. Also great for “afters” at a picnic or even as a treat in the school lunchbox.

Ingredients

100g pitted dates
50g dried apricots
100ml water
100g porridge oats
40g pecans, chopped
60g dried apricots chopped
20g cocoa powder
2 tbsp. maple syrup
3 tbsp. sunflower oil
30g Rice Krispies
Pinch of salt (optional)

Method

  1. Put the dates, 50g of dried apricots and 100ml of water into a saucepan. Bring up to the boil then simmer for 5 minutes. Leave to stand for 10 minutes……Ingredients: 100g pitted dates, 50g dried apricots, 100ml water.
  2. Pour the contents of the saucepan into a food processor. Blitz for a few seconds until finely chopped. Add the remaining ingredients and a pinch of salt (if using). Blitz until the mixture has come together……Ingredients: 100g porridge oats, 40g pecans (chopped), 60g dried apricots (chopped), 20g cocoa powder, 2 tbsp. maple syrup, 3 tbsp. sunflower oil, 30g Rice Krispies.
  3. Remove the blade, then shape into small balls and chill in the fridge for 30 minutes.
