Annabel’s Apricot Cookies

These apricot cookies are so good that I’ve put my name on them! Sweet, crunchy, and so incredibly easy to make – what’s not to love!? Plus, they contain apricots, so they practically count towards your 5-a-day!

100g unsalted butter
100g cream cheese
100g caster sugar
75g plain flour
50g dried apricots, chopped
65g white chocolate chips


  1. Preheat the oven to 180C/350F/Gas Mark 4.
  2. Cream together the butter and cream cheese. Add the sugar and beat until fluffy.
  3. Gradually add the flour, then fold in the apricots and chocolate. The dough will be quite soft but don’t worry.
  4. Drop heaped teaspoons of the mixture onto non-stick/lined baking sheets and bake for 15 minutes or until lightly golden.
  5. Allow to cool and firm up for a few minutes before removing from the baking sheet and transferring to a wire rack.
  6. Store in an airtight container.
