Salmon Fish Cakes

Mini salmon fish cakes, perfectly formed for little hands and hungry tummies. A great way to boost you baby’s intake of those vital essential fatty acids, and mummy and daddy can tuck in too!

Makes: 10 fish cakes

Ingredients
150g cooked mashed potato (cold)
175g salmon fillet , diced
3 spring onions, sliced
1 tbsp ketchup
1 tbsp mayonnaise
25g Cheddar, grated
50g panko breadcrumbs
Method
  1. Put the potato, salmon fillet, spring onion, ketchup, mayonnaise, cheese and 15g of the panko breadcrumbs into a food processor. Blend quickly and season.
  2. Shape into 10 fish cakes. Coat each fish cakes in the extra crumbs.
  3. Heat a little oil in a frying pan. Fry the cakes for 3 to 4 minutes each side until golden and cooked through.
