Power Packed Oat Bars

These brain boosting Power Packed Oat Bars are one tasty treat! They’re packed full of nutritious ingredients such as pumpkin seeds, cranberries and dried apricots.

For another afternoon sweet treat idea, give these Carrot, Banana & Sultana Muffins a go!

Cook Time: 20 minutes
Makes: 8 bars
Great for:  Kids 2-4 Years Kids 4+ Years
Ingredients
80g butter
80g brown sugar
60g (2 tbsp) golden syrup
½ tsp salt
130g porridge oats
35g chopped, dried apple
35g chopped, dried apricots
25g dried cranberries
25g pumpkin seeds
2 tbsp sunflower seeds
25g desiccated coconut
Method
  1. In a saucepan, melt together the butter, sugar, golden syrup and salt.
  2. Mix all the dry ingredients together in a bowl and stir in the butter and syrup mixture.
  3. Line and grease a 20cm square baking tin. Spoon the mixture into the tin and press down to level the surface (try using a potato masher to make it easier).
  4. Bake in an oven preheated to 180°C for 18 to 20 minutes.
  5. Store in the fridge and cut into bars before serving.
