Chicken Pasta

Swap their sandwich for a chicken pasta salad this lunchtime. This recipe is an all-round winner with a deliciously simple dressing and lots of veggies.

Ingredients

Pasta salad

225g pasta twirls (fusilli)
125g broccoli florets
125g cooked chicken, chopped
110g tinned sweetcorn
125g cherry tomatoes, halved
6 spring onions, finely sliced

Dressing

3 tbsp light olive oil
1 tbsp runny honey
1 tbsp soy sauce
1 tbsp fresh lemon juice
Method
  1. Cook the pasta following the packet instructions. Steam the broccoli florets for 3 minutes.
  2. Meanwhile, whisk together all the ingredients for the dressing.
  3. Put the chicken, sweetcorn, cherry tomatoes and spring onions into a bowl together with the drained pasta. Toss with the dressing.
