  • 2 tbsp ricotta mixed with half a tsp of icing sugar & 1 to 2 drops vanilla extract
  • 1 tbsp apricot jam
  • 1 crushed amaretti biscuit (optional)
  • 1 cooked crepe


  1. Spread the jam over the crepe, then spread over the ricotta and sprinkle over the amaretti if using.
  2. Fold into four.
