Trio of Finger Sandwiches

Sandwiches are a lunchbox favourite, so mix things up with this selection of three flavour combos in white & wholemeal bread.

Ingredients
Overall:
- 3 slices wholemeal bread
- 3 slices white bread
- a little margarine or butter
To make a Club Sandwich:
- 1/4 chicken breast, sliced
- 1 hard-boiled egg, sliced
- 2 slices gruyere cheese
- iceberg lettuce, shredded
- 1 tbsp mayonnaise
- 1/2 tomato, sliced
To make Tuna Mayonnaise with Sweetcorn:
- 1 tbsp mayonnaise
- 60 g tinned tuna
- 1 tbsp tinned sweetcorn
- 6 slices cucumber
To make Tomato, Cream Cheese and Chive:
- 1 tbsp cream cheese
- 1/2 tomato, sliced
- 1 tsp chopped chives
Method
- Spread all the slices of bread with margarine or butter and arrange on a board.
- Mix the tuna mayonnaise and sweetcorn together . Spread over one wholemeal slice. Top with the cucumber, then sandwich together with a slice of white bread. Remove the crusts and slice into 6 fingers.
- Spread one slice of wholemeal bread with mayonnaise. Top with the chicken, lettuce, cheese, tomato and egg. Sandwich together with a slice of white bread. Remove the crusts and slice into 6 fingers.
- Spread one slice of wholemeal bread with mayonnaise. Top with the chicken, lettuce, cheese, tomato and egg. Sandwich together with a slice of white bread. Remove the crusts and slice into 6 fingers.
- Spread one slice of wholemeal bread with cream cheese and sprinkle with the chopped chives. Top with the slices of tomato. Sandwich together with a slice of white bread. Remove the crusts and slice into 6 fingers.
- Arrange a selection of sandwiches in a Lunchbox.
