Sweetcorn Fritters

My daughter Lara really likes fritters. She often has them as a snack so I keep a supply of them in the freezer. To freeze them, wrap the cooled fritters in foil in a single layer with 2 fritters per packet. To serve preheat the oven to 180C/350F/160 fan and put the frozen fritters on a baking sheet.  Bake for approximately 8 minutes until hot.  These sweetcorn fritters can also be made with gluten free flour.

Ingredients

30g plain / all purpose flour  quarter cup
half tsp baking powder
quarter tsp salt
1 large egg (US extra large)
1 x 200g can sweetcorn, drained  (drained weight 170g/1 cup)
1 large or 2 small spring onions, finely sliced
2 tbsp sunflower or canola oil for frying

 

Method:

Put all the ingredients except the oil in the bowl of a food processor and whiz for one minute to make a batter.

Heat a little of the oil in a large frying pan and drop in  teaspoonfuls of the batter.  Cook for 1 to 1 ½ minutes in batches of 5 until golden on the underside, then carefully turn and cook for a further minute.

You can use the back of a spoon to help push the fritter onto a spatula to make turning easier.

Drain briefly on kitchen paper before serving

Tip: Experts recommend that we should eat 5 daily servings of fruit and vegetables. Three tablespoons of sweetcorn counts as one serving of fruit and vegetables.

 

I replaced half the sweetcorn with tuna ( my son is over 1 ) and they were delicious ! My fussy two and a half year old ate 4, not so much the little guy as I dont think I ever gave him tuna before. Will make again!
