A very quick and easy fish recipe that all the family can enjoy. Creamy white sauce with tasty cod, served with crushed new potatoes or baby shell pasta. This delicious creamy cod fish is so rewarding after a busy day.

Ingredients

  • 1 small onion, finely diced
  • 50 ml white wine
  • 200 ml fish stock
  • 100 ml double cream
  • Half tsp caster sugar
  • Half tsp lemon juice
  • 2 tsp cornflour
  • 1 tsp rice wine vinegar
  • 300g cod fillet, skinned and cut into large pieces
  • 2 tbsp chives, chopped
  • 100g baby shell pasta
  • 2 carrots, finely diced
  • 100g frozen peas

 

Method

Put the onion and white wine into a saucepan.

Bring up to the boil, then reduce by two thirds.

Add the stock and reduce again by two thirds. Add the double cream, sugar, and lemon juice.

Mix the cornflour with 1 tbsp of cold water, then add it to the hot sauce and stir until thickened.

Add the vinegar.

 

Add the cod and gently simmer for 4 to 5 minutes until just cooked.

Add the chives and gently mix together.

Cook the pasta in boiling salted water for 8 to 10 minutes or according to the packet instructions.

Add the carrots and peas 4 minutes before the end of the cooking time.

Drain, spoon a little pasta onto a plate and spoon over the cod and the sauce. Alternatively, you can serve with crushed new potatoes.

As you have picked up on a typo, the amount of wine should be 50ml, and the alcohol content in the wine is removed in the process of boiling off the liquid, making it suitable for toddlers.

If you feel unhappy about using any form of alcohol in the dish, it will be just as delicious without it.
