Life becomes very demanding and tiring when you are a new mum so it’s a good idea to think ahead and prepare some meals to put away in the freezer. That way you'll have a handy supply of nutritious, home-made meals during those hectic first days with your baby. This easy to prepare soup is ready in about 10 minutes and is almost a meal in itself. |

Ingredients1 tbsp light olive oil
Method:Heat the oil in a pan and sauté the onion, garlic and chilli for 2 minutes. Add the strips of chicken and sauté for 2 minutes more. Cut the broccoli into small florets. Add the broccoli and chicken stock, bring to the boil and simmer for 4 minutes. Stir in the coconut milk and simmer for 2 minutes. Season to taste and stir in the cooked rice.
