Rice Krispie Cupcakes

This lunch idea is a quick and easy for children to make themselves and are a lovely treat for your child’s lunchbox. Oats and dried fruits provide a good source of energy to keep you going through the afternoon. These can also be made without the nuts.

 

 

 

You can buy bags of mixed exotic dried fruits in large supermarkets You could also make this using dried apricots instead.

 

Ingredients

150g (5 oz) porridge oats
50g (2 oz) Rice Krispies
100g (4 oz) cup mixed exotic dried fruits eg: papaya, mango pineapple
60g (2 oz) pecan nuts, chopped
100g (4 oz) unsalted butter
125g (4 1/2 oz) golden syrup
85g (3 1/2 oz) white chocolate broken into pieces

 

Method

In a bowl combine the oats, Rice Krispies, chopped exotic fruits and nuts. Put the butter, syrup and white chocolate into a saucepan and heat gently until melted. Stir the mixture into the dry ingredients until they are well coated.

Line a muffin tray with 12 paper cases and divide the mixture between them, pressing down lightly. Put in the fridge to set.

These cakes will be no good for lunchboxes as they contain nuts and children aren't allowed to take nuts to school/clubs.

i agree and our school your not allowed to put cupcakes/cakes in childrens lunch boxes.Take out the nuts and make it in to a bar for the lunch box, i will give it ago

I did leave the golden syrup out when I made these and rêplaced it with a little milk. They turn out good and my kids (8 and 4) love them. I must admit that I do too plus they seem to be helping my energy levels (I took one with me at work and feel more energetic than I usually feel this time a day). I do recommend them.

 

These are far too sweet so I wouldn't make them again without reducing the syrup, perhaps. My daughter has a very sweet tooth so loves them, naturally, but nobody else can eat a whole one!

I'd be interested to know if anybody else found the same problem/has successfully adapted the recipe because the concept of these cupcakes is fantastic!
