Lettuce Boats

Ingredients

2 tbsp crème fraiche or mayonnaise
1 tbsp ketchup
Half tsp lemon juice
1 x 185g can tuna drained
2 spring onions, sliced
Quarter red pepper, diced (2 tbsp)
2 tbsp drained sweetcorn

Method

Mix the crème fraiche or mayonnaise with the ketchup and lemon juice in a large bowl. 

Flake the tuna with a fork and add to the bowl with the spring onion, red pepper and sweetcorn. 

Add salt and pepper and mix together.

Taste and add more salt, pepper or lemon juice as you like.
