Tomato Sauce Pasta

Pasta  doesn’t have to be fattening if you make a low fat sauce like this delicious tomato sauce pasta. A really good home-made tomato sauce is always popular and it can be served with any type of pasta and a little freshly grated parmesan cheese.  You can add a couple of tablespoons of chopped sunblush (semi-dried) tomatoes together with the fresh tomatoes if you want to bring out the flavour.

Ingredients

2 tbsp olive oil
1 onion, peeled and chopped
1 clove garlic, crushed
1 X 400g/14 oz can chopped tomatoes
4 ripe plum tomatoes, skinned, de-seeded and chopped 
half tsp balsamic vinegar
½ tsp brown sugar
a handful of basil leaves, torn into pieces
salt and freshly ground black pepper
200g (7 oz) spaghetti

 

Method:

Heat the oil in a saucepan and sauté the onion and garlic for 5 to 6 minutes until softened but not coloured.  Add the remaining ingredients (except the spaghetti), cover with a lid and cook over a medium heat for about 20 minutes.

Meanwhile, bring a large pan of lightly salted water to the boil.  Add the spaghetti and cook according to the timing instructions on the packet.  Drain and serve topped with the sauce.
