Rice Krispie Cakes
These Rice Krispie Cakes are quick and easy for children to make themselves and are a lovely treat for your child’s lunchbox. Oats and dried fruits provide a good source of energy to keep you going through the afternoon. These can also be made without the nuts.
You can buy bags of mixed exotic dried fruits in large supermarkets You could also make this using dried apricots instead.
Ingredients
150g (5 oz) porridge oats
50g (2 oz) Rice Krispies
100g (4 oz) cup mixed exotic dried fruits eg: papaya, mango pineapple
60g (2 oz) pecan nuts, chopped
100g (4 oz) unsalted butter
125g (4 1/2 oz) golden syrup
85g (3 1/2 oz) white chocolate broken into pieces
Method
In a bowl combine the oats, Rice Krispies, chopped exotic fruits and nuts.
Put the butter, syrup and white chocolate into a saucepan and heat gently until melted.
Stir the mixture into the dry ingredients until they are well coated.
Line a muffin tray with 12 paper cases and divide the mixture between them, pressing down lightly.
Put in the fridge to set.
