Minestrone Soup
Minestrone soup is great when the weather gets cold. I also think that if your child takes lunchboxes to school its good to have something warm for lunch sometimes so why not include homemade soup in a thermos flask. This soup recipe is easy to prepare and can be made in less than 20 minutes.

Ingredients
MethodSaute the onion and garlic gently in olive oil for 5 minutes. Add the carrot and celery and cook for a further 5 minutes. Add the tomatoes, tomato puree, stock, pasta, bay leaf and thyme. Bring to the boil and simmer for 6 minutes. Add the peas, bring back to the simmer and cook for a further 3 minutes. Remove the bay leaf. If you wish you can serve with a little freshly grated parmesan

This needs to cook a little longer to get the carrots nice and soft.

Very tasty! Used a full can of tomatoes and 2 carrots. Swapped the peas for some spinach i had in the freezer and grated a little bit of cheddar to sprinkle on top. Made about 5-6 servings. Will definitely be making again.

That looks really good i just had some soup for lunch and im thinking i really need to start cooking more varieties. I love how its low fat as well. I take vitamins every day and exercise a few times a week to keep in shape.
