Instead of sandwiches why not use boat shaped gem lettuce leaves to hold these delicious sandwich fillings...a great healthy recipe.
6 gem lettuce leaves
75g cooked chicken breast, shredded
75g chopped ripe mango
Half spring onion, finely sliced
1 tbsp lemon juice
2 tsp honey
1 ½ tbsp light olive oil
Separate the leaves and lay out on a plate. In a bowl, mix together the shredded chicken, mango and spring onion. Mix together the lemon juice, honey and olive oil and toss with the chicken mixture. Place a spoonful of the mixture into each lettuce leaf and serve.
Chicken and Sweetcorn
3 tbsp drained canned sweetcorn
1 spring onion, sliced
2 tbsp light mayonnaise
Squeeze of lemon juice
4 gem lettuce leaves
Tear the chicken into little shreds with your fingers. Put in a medium bowl and mix in the sweetcorn, spring onion and mayonnaise plus a little salt and pepper to taste.
Add a squeeze of lemon juice (1/4 tsp quarter) and taste. Add a bit more lemon juice if you like the mixture to be more lemony.
Spoon the filling into lettuce leaves
Chicken and Beansprouts
2 tbsp light mayonnaise
2 tsp plum sauce
half tsp lemon juice
50g/2 oz sliced cooked chicken
50g (2 kiddie handfuls) beansprouts
Mix the mayonnaise, plum sauce and lemon juice together in a large bowl. Shred the chicken with your fingers and add to the bowl with the beansprouts. Mix everything together and season with a little salt and pepper. Taste and add little more salt and pepper or lemon juice as you like…
Tuna Mix
2 tbsp crème fraiche or mayonnaise
1 tbsp ketchup
Half tsp lemon juice
1 x 185g can tuna drained
2 spring onions, sliced
Quarter red pepper, diced (2 tbsp)
2 tbsp drained sweetcorn
Mix the crème fraiche or mayonnaise with the ketchup and lemon juice in a large bowl. Flake the tuna with a fork and add to the bowl with the spring onion, red pepper and sweetcorn. Add salt and pepper and mix together. Taste and add more salt, pepper or lemon juice as you like.
Prawn
100g small cooked prawns
2 tbsp light mayonnaise
1 tbsp tomato ketchup
A little paprika
Mix the prawns with the mayonnaise and ketchup, spoon the filling into the lettuce leaves and roll up.
