The oats in these incredibly moreish flapjacks give a slow energy release for your child and the dried fruit is full of fibre. They will keep children going on busy days. These are also fun for children to make themselves.

  • 85g butter
  • 90g brown sugar
  • 55g golden syrup
  • 100g rolled oats
  • 30g Rice Krispies
  • ¼ tsp salt
  • 40g desiccated coconut
  • 30g chopped dried apricots (ready to eat)
  • 30g cranberries
  • 30g raisins
  • 40g chopped pecans (optional)

  1. Preheat the oven to 170°C/325°F 
  2. Line a 20cm square tin with baking parchment, with the parchment coming up the sides.
  3. Put the butter, sugar and golden syrup in a large saucepan.
  4. Heat gently, stirring occasionally, until the butter and sugar have melted.
  5. Remove from the heat and mix in the remaining ingredients.
  6. Spoon into the prepared tin and press out in an even layer (a potato masher is useful for this!)
  7. Bake for 25 minutes, until golden around the edges.
  8. Cool completely, then lift out of the tin and cut into 12 small bars.
  9. You may need to store these in the fridge.

  • Converting it into a little healthier snack:

    Instead of butter I use virgin coconut oil
    I put 10g less brown sugar in it
    Instead of golden syrup I use 45g clover honey
    I only use 1/8th tsp salt
    Bake only 22 minutes otherwise it tends to burn a little

  • I found this recipe to be very greasy and four tablespoons of golden syrup was too much. You could easily take this down to 3.5. Lovely as a treat but had to cut the bars to half the size as they were incredibly rich!

  • These are gorgeous i used crushed cornflakes instead of rice krispies. I think they are lovely without the coconut also.

  • I made these for my daughters lunch box and had to make more because my husband wanted them for his box too.
    I used 4 tbsp of syrup as i found 5 to much.
    better than the shop brought ones.
