This family recipe is very quick and easy to prepare and tastes delicious. For a good flavour you need to use ripe tomatoes, if the tomatoes are not ripe or lack flavour, add a little tomato puree or use tinned tomatoes. I use the semi dried sunblush tomatoes in this sauce and you can often buy these at the deli counter in the supermarket.
 

 

 

Essential for keeping vampires at bay, garlic also helps to strengthen the immune system. A traditional European folk custom was to place a head of garlic in a small bag and tie it around a child’s neck to ward off colds and flu. Indeed this was not so strange as some of the compounds found in garlic can be absorbed through the skin. Eating garlic can also help to improve circulation and lower blood pressure.

Ingredients

1 tsp olive oil
1 garlic clove, peeled and crushed
1 2/3 cups canned tomatoes
2 tbsp pesto
1/4 tsp mild chili powder
1 tsp balsamic vinegar
1 tsp superfine sugar
salt and freshly ground black pepper
1 tbsp shredded fresh basil
2 tbsp freshly grated Parmesan cheese

 

Method:

Heat the oil in a frying pan over a low heat, add the garlic and sauté for 30 seconds. Stir in the tomatoes and break them up with a spoon. Add the remaining ingredients except the basil and Parmesan cheese. Season the simmer gently for 10 minutes. Stir in the basil and Parmesan, and cook jus tuntil the chees has melted.
