The secret of getting your child to enjoy eating salad is to make a delicious salad dressing. My children are all hooked on this sauce and now prefer to come home to a bowl of chopped salad with this dressing than a bag of crisps and a chocolate biscuit. They also use it as a dip for crudités like cucumber, sweet pepper and carrot. I make bottles and bottles of it and store it in my fridge.

For adults I make a salad with mixed lettuce, tomato, fine green beans, sweetcorn and toasted pine nuts and mix with this dressing.  Everyone asks for the recipe and its so easy as you just whiz all the ingredients together in a blender. The recipe is easily doubled..

Ingredients

25g chopped onion
50 ml sunflower oil
2 tbsp rice wine vinegar
2 tbsp water
Half tbsp chopped fresh ginger root
1 tbsp chopped celery
1 tbsp soy sauce
One and a half tsp tomato puree
One and a half tsp caster sugar
1 tsp lemon juice
Salt and freshly ground black pepper

 

Method:

Simply combine all the ingredients except for the salt and pepper in a blender or food processor and process until smooth. Season to taste.
