This family recipe is very quick and easy to prepare and tastes delicious. For a good flavour you need to use ripe tomatoes, if the tomatoes are not ripe or lack flavour, add a little tomato puree or use tinned tomatoes. I use the semi dried sunblush tomatoes in this sauce and you can often buy these at the deli counter in the supermarket.

Essential for keeping vampires at bay, garlic also helps to strengthen the immune system. A traditional European folk custom was to place a head of garlic in a small bag and tie it around a child’s neck to ward off colds and flu. Indeed this was not so strange as some of the compounds found in garlic can be absorbed through the skin. Eating garlic can also help to improve circulation and lower blood pressure.

Ingredients

200g spaghetti
2 tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
8 ripe ripe plum tomatoes, skinned, de-seeded and chopped (approx. 750g) or 1 X 400g tin chopped tomatoes
100g semi-dried tomatoes (sunblush tomatoes)
1 tsp balsamic vinegar
handful of basil leaves torn into pieces
pinch of sugar
salt and pepper

 

Method:

Cook the spaghetti in a large pan of lightly salted water according to the packet instructions. Heat the olive oil in a saucepan and sauté the onion for 5 to 6 minutes. Add the garlic and cook for one minute. Add all of the remaining ingredients cover with a lid and cook over a low heat for 10 minutes. Stir in the cooked spaghetti.
