Easy Enchiladas Recipe

This is an easy enchiladas recipe and is absolutely scrumptious. This easy enchiladas recipe has become a firm family favourite with my three children. Wraps are the new trendy food and enchiladas are very popular with children. It’s a great way to sneak some extra veggies into their diet. An Enchilada is a Mexican dish where you fill a tortilla with a variety of fillings such as shredded chicken, beef, vegetables or beans, then cover with a sauce and some grated cheese. The filled tortillas are then baked in the oven until cooked and the cheese is melted and golden.  This is my favourite enchilada recipe – you can make it with minced chicken or turkey.

To make a tasty vegetarian enchilada. Sauté a red onion with half a red pepper in a little olive oil until softened. Add a small tin of sweetcorn (198g), cook for 2 minutes, then add a tablespoon each of balsamic vinegar and honey and cook for one minute. Spread four small tortillas with a tablespoon of mild salsa or some tomato sauce, arrange  the corn filling on one half of the tortilla , sprinkle over some grated Cheddar, roll up, scatter over some more Cheddar and grill for a couple of minutes until the cheese has melted.

These are delicious - I used turkey mince as they dont seem to have chicken mince anywhere that I shop - this made them very inexpensive. My kids werent too fussy about the tomato sauce in this recipe so I changed it for the hidden vegetable sauce which they love and it was a perfect meal!
