Easter Bunny Biscuits

This easter bunny biscuits is a fun easter recipe and makes a great tea-time treat. This is also a fun easter recipe for older children to make themselves and they will enjoy cutting out and decorating the Bunny Biscuits. You can buy bunny cookie cutters or children can draw their own bunny rabbit shapes and you can then make these into card template to use as a guide to cut out the biscuits.

Ingredients

65g butter
50g soft brown sugar
4 tbsp golden syrup
150g plain flour, sieved
1 tsp ground ginger
half tsp bicarbonate of soda

 

Method

Preheat the oven to 180C / 350F / Gas 4

Beat the butter and sugar with an electric whisk until pale.  Add the golden syrup, flour, ginger and bicarbonate of soda and beat together until you form a dough.  Wrap in clear film and chill for at least 30 minutes.
 
Roll out on a  floured work surface to a thickness of about 3 mm.  Start in the centre of the dough and roll evenly outwards .  Cut into shapes using cookie cutters from the outside edges of the dough into the centre, cutting as close together as possible. . Re roll the trimmings until all the dough is used up.

Place on baking sheets lines with baking paper and cook for about 8 minutes.

Allow to cool and then transfer to a wire rack to cool completely.
