Apricot & Ricotta Crepe

A delicious crepe filling combination Apricot and Ricotta when you follow the crepe recipe.

Ingredients
2 tbsp ricotta mixed with half a tsp of icing sugar and 1 to 2 drops vanilla extrace
1 tbsp apricot jam
1 crushed amaretti biscuit (optional)
Method
Spread the jam over the crepe, then spread over the ricotta and sprinkle over the amaretti if using.
Fold into four.
