These delicious flapjack type bars are packed full of nutritious ingredients. They are great for lunchboxes or as a tasty snack food any time of the day. They are also fun for children to make themselves.

Pumpkin seeds are a powerhouse of nutrients. They contain healthy omega 3 fats, which are crucial for brain development and a healthy heart.

For a delicious snack try these Honey and Soy Toasted Seeds
Heat one tablespoon of sunflower oil in a non-stick frying pan, add 75g each of pumpkin and sunflower seeds and cook continuously stirring, for about 2 minutes or until the seeds are lightly browned. Remove from the heat, stir in 1 tbsp soy sauce, return to the heat for one minute and then leave to cool.

Ingredients

7 tablespoons unsalted butter
1/2 cup packed light brown sugar
5 tablespoons light corn syrup or goldern syrup, such as Lyle's
1/2 teaspoon salt
1 1/2 cups quick-cooking oats
1/4 cup chopped dried apple
1/4 cup chopped dried apricots
1/4 cup dried cranberries
1/4 cup pumpkin seeds
2 tablespooons sunflower seeds
1/4 cup dried coconut

 

Method:

Preheat the oven to 350 degrees fahrenhite. Line and grease an 8-inch square backing pan. In a saucepan, melt together the butter, sugar, syrup, and salt.

In a bowl, combine the oats, dried apple, apricots, and cranberries, pumpkin and sunflower seeds, and coconut. Stir in the butter mixture. Spoon the mixture into the pan and press down with a potato masher to compress and level the surface.

Bake for 18-20 minutes. Allow to cool for 15 minutes; cut into bars with a sharp knife. Allow to cool completely before lifting the pan. Store in fridge.
