It seems there is a wicked fairy out there and wherever chicken is on the menu for children it is covered in breadcrumbs and in the shape of a dinosaur. I test all my recipes out on 20 children before they go into my books and I have found that children tuck in with gusto to marinated chicken without breadcrumbs. The secret is to find a delicious marinade for this easy chicken recipe…

One great way to cook chicken is on a griddle pan – it’s quick and easy and keeps the chicken tender and moist. As it requires very little fat, griddling is a good low fat method of cooking. Chicken contains much less fat than other meat as most of the fat lies in the skin, which can be removed.

 

Chicken Recipe

 

 

Another delicious way to prepare chicken is to make chicken satay skewers. Simply mix together 1 tbsp each smooth peanut butter, soy sauce, lemon juice, 1 tbsp honey, a crushed garlic clove, half tbsp sunflower oil and season with a little black pepper. Thread chunks of chicken onto skewers and cook on the griddle or alternatively under a preheated grill, brushing occasionally with the marinade.

Ingredients

4 chicken breasts

 

Marinade

1 tbsp lemon juice
1 clove garlic, crushed
2 tbsp soy sauce
2 tbsp runny honey
freshly ground black pepper
1 tbsp olive oil

a little vegetable oil

  

Method:

Cover the chicken breasts with cling film or greaseproof paper and flatten slightly with a mallet or a rolling pin until about one and a half cm. (1/2 inch) thick.

In a bowl mix together all the ingredients for the marinade and marinate for at least one hour. Remove the chicken and reserve the marinade.

Heat the griddle until really hot (or you could use a frying pan), brush with a little oil and cook the chicken for 4 to 5 minutes on each side or until cooked through. Strain the marinade, pour it into a small saucepan, bring to the boil and then simmer for one minute (add a little water if necessary).

Serve the chicken with the sauce. If liked, serve with a selection of griddled vegetables, such as courgettes, mange tout, sweetcorn and tomatoes.
