Snack Food - Rice Krispie Squares
Adding oats for long lasting energy, nuts for protein and dried apricots for betacarotene gives these Rice Krispie squares a healthy twist for snack food. They are very easy for children to prepare and require no cooking.

These would be good for Lunchboxes. It would be a nice idea to make them together with your child at the weekend and then let him or her take some into school to share with friends. You can leave out the pecans if you prefer, particularly if there is a child in the year with a nut allergy. |
Ingredients100g white chocolate
MethodMelt together the chocolate, butter and syrup. In a large bowl mix together the Rice Krispies, oats, dried apricots and pecans. Stir in the melted chocolate mixture. Line a fairly shallow 20cm (8 in) square baking tin. Spoon the mixture into the tin and level the surface with a potato masher. Place in the fridge to set and cut into squares before serving.

Very quick and simple to make, a really interesting twist on plain krispie cakes and were snapped up very quickly!
