Easy Chicken Recipe - Maple Glazed Chicken
For many children the sight of a piece of chicken devoid of breadcrumbs is enough to provoke a panic attack. I like to cook marinated chicken on the griddle. A griddle is a very healthy way of cooking as it uses very little fat and keeps the chicken tender and moist. You can also griddle vegetables like sliced courgettes, mangetout and sweet peppers and its also a great way to cook salmon or steak.
The smoked paprika gives the chicken a rich flavour and orange hue. Try also the delicious honey and soy marinade in this easy chicken recipe.

Sweet smoked paprika is available in some supermarkets. I use Sweet Smoked Paprika by La Chinata www.lachinata.com which I found in Sainsburys. You can also order smoked paprika on-line from www.delicioso.co.uk. Be careful not to use hot paprika by mistake!

Ingredients4 skinned chicken breasts
Maple Glaze Marinade 5 tbsp vegetable oil
Honey Soy Marinade 1 tbsp lemon juice
MethodCover the chicken breast with cling film and use a heavy smooth-sided mallet to pound the chicken, working from the middle outward to a uniform thickness. Or cover with cling film then bash a few times with a mallet. Whisk together the ingredients for the marinade, pour over the chicken and leave to marinate for at least an hour.. Heat the griddle and brush with a little olive oil. Remove the chicken and cook for about 4 minutes each side or until cooked through, basting occasionally. Pour over any extra juices to serve. If making the honey soy marinade, strain the remaining marinade , pour it into a small saucepan, bring to the boil and then simmer for one minute (add a little water if necessary). Serve the chicken with the sauce.

I tried the honey soy marinade - delicious! My wee boy had been off chicken for a while, so this tempted him back to the idea!! His dad and grandad were equally impressed.
