Try making finger foods for infants. One of my favourite finger foods for infants is Chicken Sliders. The red onion and tomato chutney give these mini chicken rissoles a delicious flavour. They make perfect finger food for infants.

You can make this using chicken breast, chicken thigh or minced chicken.

 It’s good to make this using the white and dark meat of the chicken. The dark meat contains twice as much chicken as the breast.

Ingredients

3 slices white bread, crusts removed
4 tbsp milk
1 tbsp olive oil
1 red onion (approx 125g) chopped
1 clove garlic, crushed
250g chicken
2 tsp soy sauce
3 tbsp tomato chutney
1 tsp tomato puree
2 tbsp sunflower oil

 

 

Method:

Put the bread in a food processor to make breadcrumbs.  Add the milk and leave to soak.

Meanwhile, sauté the onion for 5 minutes in the olive oil until softened.  Add the garlic and cook for a further minute. 

Combine all the ingredients together. Season to taste. Chop for about a minute in a food processor.

Heat the oil in a large frying pan. Drop the mixture by tablespoons into the pan. Press down slightly using a wet teaspoon. 

Sauté for 2 to 3 minutes on each side or until golden and cooked through.
