Finger Foods For Infants - Chicken Sliders
Try making finger foods for infants. One of my favourite finger foods for infants is Chicken Sliders. The red onion and tomato chutney give these mini chicken rissoles a delicious flavour. They make perfect finger food for infants.
You can make this using chicken breast, chicken thigh or minced chicken.

Ingredients3 slices white bread, crusts removed
MethodPut the bread in a food processor to make breadcrumbs. Add the milk and leave to soak. Meanwhile, sauté the onion for 5 minutes in the olive oil until softened. Add the garlic and cook for a further minute. Combine all the ingredients together. Season to taste. Chop for about a minute in a food processor. Heat the oil in a large frying pan. Drop the mixture by tablespoons into the pan. Press down slightly using a wet teaspoon. Sauté for 2 to 3 minutes on each side or until golden and cooked through.

These are really tasty but because chicken was whizzed up in processor I found it difficult to make my usual checks that the chicken is properly cooked. As well as recommended fry time I check it's hot in centre. My biggest check though for pan fried chicken is looking at it - white right through - no pink. For these tasty morsels there was no change of colour to me and my instinct just kept wanting to cook on! Ended up zapping them in microwave because they had a 'raw' look to them inside!! Think I'd feel happier if pan fried a couple mins to brown then finish in oven. Anyone any ideas? After I cooked the life out of them they were very tasty! :-)

i cooked these last night and yummy, I couldn't find tomato chutney so I winged it and used tomato pesto, blended one up with veggies for our 9 mo, and our 2 year old loved then, so did my husband and I I made them a bit bigger, so didn't get 20 but I will make these again for sure, and I will freeze them for a perfect light lunch for my 2 year old as he doesn't eat much at lunch time at all!

I am very pleased with this recipe. I used wholemeal bread and parsley. I didn't cook the onion first and left out the garlic. I have made my own burgers and meat balls before... None have been as tender and moist as these. I will add bread to my own recipes in the future. Thank you

Really messed up these. The recipe said to put all ingredients in bowl and blitz so I put the sunflower oil in too! Then quickly realised my error!!
