Sesame Beef Stir Fry

It is important to include red meat in your child’s diet as red meat provides the richest source of iron and iron deficiency is the most common nutritional deficiency in children in the UK.

When your iron stores are low, less of the oxygen carrying pigment haemoglobin is made and less oxygen gets to the brain, resulting in difficulty concentrating and a shortened attention span. A lack of iron also makes you feel tired  so if your child is sitting exams over the next few weeks, this would be a good recipe to make for a quick family supper.

 

Easy Chinese Recipe - Beef Stir Fry

Ingredients

Suitable for freezing
1 tbsp sesame oil
1 clove garlic, crushed
1 medium carrot cut into matchsticks
100g (4 oz) baby sweetcorn cut into quarters
1 courgette (approx 100g/4 oz) cut into matchsticks
300g (10 oz) sirloin or beef fillet, cut into very fine strips
1 tbsp cornflour
150ml (5 fl oz) beef stock
2 tbsp dark brown sugar
2 tbsp soy sauce
a few drops Tabasco sauce
1 tbsp sesame seeds

 

Method:

Heat the sesame oil in a wok and stir fry the garlic, carrots, sweetcorn and courgette for 3 to 4 minutes.  Add the beef and continue to stir fry for 4 to 5 minutes. 

Mix the cornflour together with a tablespoon of water and stir into the beef stock. Stir this into the pan together with the sugar, soy sauce, Tabasco and sesame seeds.  Bring to the simmer, cook until slightly thickened and serve with rice.
