Ingredients2 1/2 ounces Chinese-styled dried thin egg noodled (lo mein) or use bean thread (cellophane) noodles
Method:Cook the noodles according to the packet instructions (or use pre-cooked noodles). Drain and set aside. Put the broth, soy sauce, peas, sweetcorn and chicken in a pan over a medium heat. Bring to a simmer and cook for 2 minutes. In a small cup, mix the cornstarch with 1 teaspoons of cold water and add to the contents of the pan then cook, stirring, for a further minute until the liquid thickens slightly. Add the noodles and spring onion and reheat briefly, stirring.

my 22 month old son loves this recipe (and so do I!)...it usually takes a couple of attempts for him to try a new recipe but he loved this from the first time I made it!
