Chicken Noodle Recipe - Mummy's Pot Noodle
Always popular with kids, but the ones you buy are really high in salt. It only takes a few minutes to make your own and it’s fun to serve them in a cup, a bit like pot noodles. This chicken noodle recipe would make a good snack after school

Ingredients150g (5 oz) fine Chinese style dried egg noodles or use straight to wok noodles
MethodCook the noodles according to the packet instructions (or use pre-cooked noodles). Drain and set aside. Put the stock, soy sauce, peas, sweetcorn and chicken in a pan over a medium heat. Bring to a simmer and cook for 2 minutes. In a small cup, mix the cornflour with 2 teaspoons of cold water and add to the contents of the pan then cook, stirring, for a further minute until the liquid thickens slightly. Add the noodles and spring onion and reheat briefly, stirring.

A great very very easy tea. My son loved it and so did the husband for a snack so happy all round. I did add some sliced green pepper and a little garlic to add a little more flavour. Thanks a lot for the inspiration

WOW what an amazing recipe, devoured by my two boys (3 1/2 yrs). What a simple but so tasty recipe! I can see me making this more oftern even for my lunch at work, never been a fan of pot noodles due to powdery taste but this is sooooooo good, Thanks Annabel x

my 22 month old son loves this recipe (and so do I!)...it usually takes a couple of attempts for him to try a new recipe but he loved this from the first time I made it!
