Breakfast Muffin Recipes
These are one of my favourite breakfast muffin recipes and they are so easy to make. They are great as breakfast muffin recipes but also delicious for kid lunch boxes or a snack. A tasty way to get your child to eat more fruit and vegetables is this breakfast muffin recipe.
Around a quarter of mothers include cereal bars in their childs lunchbox. (Mintel) However many cereal bars marketed for children contain over 40% sugar with more calories from sugar than in a bar of chocolate. When you eat cereal with milk, much of the sugar is washed away from your teeth, whereas with bars, the combination of fat and sugar means it hangs around, giving bacteria time to get to work turning the sugar to the acids which cause decay. |
Breakfast Muffin Recipe Ingredients150g (5 oz) plain wholemeal flour
MethodPre-heat the oven to 180C/350F/Gas 4. Combine the flour, skimmed milk powder, baking powder, cinnamon, salt and ginger in a mixing bowl. In a separate bowl, combine the honey, maple syrup, eggs, vegetable oil and vanilla essence. Beat lightly with a wire whisk until blended. Add the grated apple, carrots and raisins to the liquid mixture and stir until just combined. Line a muffin tray with paper cups and fill until two-thirds full. Bake for 20 to 25 minutes. You can also make mini muffins which are ideal for children they will take about 15 minutes to bake.

I've made these muffins numerous times to the delight of my three-year-old daughter. I've even sent them to nursery for all her little friends - there is never a single muffin left! Mine have never risen like the ones in the photo. No idea why as I've stirred only the minimum amount and my baking powder is not out of date. They still taste great though! The granulated sugar is meant to be sprinkled on top of the batter before placing in the oven to bake. This gives a lovely crispy top!

Made these yesterday and now realise just how sweet these muffins are with the honey, maple syrup AND sugar. The sugar is only mentioned in the list of ingredients and not the recipe so I wonder whether it is a mistake?

OMG, these are delicious! DH and I can't stop eating them - the babe has only had one :-0 Made them on Monday and there are now only 2 left. I did give my neighbour a couple. I found that the recipe made 14. Yummmmmmm!!!

why do you use both honey and syrup? could i just use twice the amount of honey

these are amazing!!!! my fussy-eater son loves them! we use them for in packed lunch but sometimes we opt for them as after school snack instead. great recipe! as a treat but still healthy option we also coat the top with melted milk choc and then use a white choc writing pen/squeezy to make patterns or letters on top for lunch box treat cakes.
