Mother's Day Breakfast
Suprising Mummy on Mother's Day is the perfect excuse for a lie-in. Dad and the kids can take charge in the kitchen, and create a beautiful breakfast spread that mum truly deserves.

A Hearty BreakfastThis heart-shaped egg would make a fun surprise breakfast for Mum and only takes a few minutes to prepare.
Ingredients1 thick slice white bread
MethodCut a hole in the centre of the bread using a hear-shaped cookie cutter about 3” wide at its widest point. Melt half the butter in a small frying pan and sauté the bread on one side until golden. Turn the bread over and melt the remaining butter in the heart – shaped cut out, break the egg into it and season lightly. Cook, covered for about 2 minutes until the egg is cooked to mums’ liking. You can also dip the cutout heart in a little egg and sauté that too. MAKES ONE PORTION |
Mummy’s Museli
Museli is an easy treat to make for Mummy’s breakfast and is full of yummy but fairly healthy treats.
This luxury museli is based on the breakfast served in two wonderful hotels, the Wolseley in London and the Ritz-Carlton in Singapore. You can serve this with a handful of blueberries on top if you aren’t making the fruit plate.
Ingredients
1 tbsp sultanas
1 tbsp raisins or dried cranberries
2 tbsp apple juice
30g/1oz/4 tbsp rolled oats
100ml/3 1/2 fl oz milk
1 tbsp crème fraiche or double cream
1/4 apple, core removed
1 tbsp chopped pecans
1 tsp clear honey
4 unstalted pistachio nuts, chopped
Method
Soak the sultanas and raisins in the apple juice for a few hours or over night .
Put the oats in a bowl with 4 tbsp of the milk and leave to soak in the fridge for a minimum of 1 hour, or overnight.
Remove from the fridge and stir in the crème fraiche.
Grate the apple and add it to the bowl, along with the sultanas, raisins and pecans.
Stir the museli together and add a further 2 or 3 tbsp milk, to give a soft but not runny consistency.
Drizzle over the honey and scatter the pistachios over the top to serve.

Frozen Berry Smoothie
You can either buy a bag of frozen berry fruits or freeze some fresh berries overnight.
Ingredients
150g frozen berries eg:raspberries, blackberries, blackcurrants, strawberries etc.
1 small banana
4 tbsp strawberry drinking yoghurt
100 ml cream soda
Method
Put the frozen berries and banana into a food processor and whiz together until smooth.
Pass through a sieve into a bowl.
Add the yoghurt and cream soda and stir together.
Pour into chilled glasses and serve.
