Brain Booster Food - Power Packed Oat Bars

These delicious flapjack type bars are perfect brain booster foods as they are packed full of nutritious ingredients. Oats provide a good source of long lasting energy. This brain booster food is also fun for children to make themselves.
 

Brain Booster Food

 

 

Pumpkin seeds are a powerhouse of nutrients. They contain healthy omega 3 fats, which are crucial for brain development and a healthy heart.

For a delicious snack try these Honey and Soy Toasted Seeds.

Heat one tablespoon of sunflower oil in a non-stick frying pan, add 75g each of pumpkin and sunflower seeds and cook continuously stirring, for about 2 minutes or until the seeds are lightly browned. Remove from the heat, stir in 1 tbsp soy sauce, return to the heat for one minute and then leave to cool.

Brain Booster Food Ingredients

80g butter
80g brown sugar
60g (2 tbsp) golden syrup
half tsp salt

130g porridge oats
35g chopped dried apple
35g chopped dried apricots
25g dried cranberries
25g pumpkin seeds
2 tbsp sunflower seeds
25g desiccated coconut

 

Brain Booster Food Method:

In a saucepan, melt together the butter, sugar, golden syrup and salt.

Mix all the dry ingredients together in a bowl and stir in the butter and syrup mixture.

Line and grease a 20cm square baking tin. Spoon the mixture into the tin and press down to level the surface using a potato masher.

Bake in an oven pre-heated to 180C for 18 to 20 minutes.

Store in the fridge and cut into bars before serving.

These Trail bars are lovely, not just for the children!!! My eldest daughter (8 Years old) loves them and keeps pestering me to make more!!
