We all know that we should include 5 portions of fruit and vegetables in our diet. As well as providing vitamins and minerals they help to protect us against cancers and heart disease. In general the more colourful the food, the more nutritious it is as the actual pigment contains antioxidants. So a red grapefruit is better for you than an ordinary grapefruit and an orange fleshed sweet potato is better for you than an ordinary potato. It is important to ensure that you include a good variety of colours to make sure you are getting a good balance in your diet. |
Ingredients12 tablespoons light olive oil
Method:heat the oil in a saucepan, add the crushed garlic, and sauté for a few seconds, then add the onion and sauté for a further 2 minutes. Add the carrot, zucchini, and mushrooms and sauté for 4 minutes, stirring occasionally. Add the balsamic vinegar and cook for 1 minute. Stir in the passata and sugar, cover and simmmer for 8 minutes. Add the vegetable broth and cook for 2 minutes, stirring continuously. Add the basil and season to taste. Transfer to a blender and blitz until smooth.

Just made this today for my 10 and half month old. Instead of celery i added pork so he can get his protein. I let him try some when i'd made it and i couldn't get more on the spoon quick enough! He loves it! Great recipe. :)
