Children tend to enjoy minestrone soup and adding Alphabet Pasta gives it extra appeal. This recipe is very quick and easy to prepare. Serve with a little freshly grated parmesan if you wish.

Ingredients

1 table spoon vegetable oil
1/2 small onion, peeled and finely chopped
1/2 leek, white part only, washed and finely chopped
1 medium carrot, peeled and diced
1/2 celery stalk, diced
1 cup green beans, cut into 1/2-inch lengths
1 potato, peeled and diced
1 tablespoon fresh parsley, finely chopped
2 teaspoons tomato paste
5 cups chicken or vegetable broth
3 tablespoons frozen peas
1/3 cup very small pasta shapes  
freshly grated parmesan for serving

 

Method:

Heat the oil in a saucepan and fry the onion and leek for 2 minutes, then add the carrot, celery, green beans, potato and parsley and sauté for 4 minutes. Stir in the tomato paste and cook for 1 minute. Pour over the chicken or vegetable broth and simmer, covered, for 20 minutes. Add the frozen peas and pasta and cook for 5 minutes.
