Chicken Patties Ingredients1/2 small onion (30g) Chicken Patties Method:Put the onion and oil in a frying pan and sauté over a medium heat for 4 to 5 minutes, until soft and translucent. Transfer to a plate and allow to cool thoroughly. Pulse the chicken thighs in a food processor until finely minced. Put the chicken and cooked onion in a large bowl and add the remaining ingredients (season with salt and freshly ground black pepper). Mix thoroughly. Heat the remaining sunflower oil in a frying pan over a medium heat and drop a teaspoonful of the mixture into the pan, pressing down slightly to form a patty. Fry for 2 1/2 minutes each side, until golden.

These are great, my 10mth old loves them and doesn't even mind them cold! We live in Australia so don't have access to the smoothies so I instead boiled to soften some semi dried apricots mashed them and once cooled mixed with some natural yoghurt and used that instead - it seems to work...

My kids like to eat food on sticks but if you don’t want to bother with skewers, form the mixture into 6 burgers and serve with the sauce on top.

Hello - does anyone know what I could use to substitute the Apricot Smoothie Spread? Maybe yogourt? I live in Canada, and can't easily purchase the AK products. :(

My almost 2 yr old loves these. I cook a batch up and freeze them in take away containers then defrost 2-3 wrapped in kitchen paper towel in microwave for 20-30 seconds. Great fast meal with couscous and vegies. (I make them flat though, like rissoles!)

I really like the idea of this recipe however, it would be useful if you could give some advice on the freezing/re-heating aspect. I am very wary of re-heating - especially chicken. Can you give some more info please? Thanks
