Chicken & Apricot Curry
Whilst a very hot chicken curry may not hit the spot for babies, a mild and creamy one is often popular. Dried apricots are rich in betacarotene and also contain iron.

Ingredients
MethodCook the pasta according to the instructions on the packet. Drain Heat the oil in a saucepan. Add the onion and ginger and saute for 5 minutes. Add the curry paste, then the stock and coconut milk Add the apricots and squash. Bring to the boil, then simmer, covered, for 10 minutes until the squash is tender. Whiz until smooth using a hand blender. Fry the chicken for 3 - 4 minutes, then add the sauce. Finally, stir in the drained pasta.

We have just made this!!!! Only problem is it only made 3 portions so i would say to double up on all weights!! My little one absolutely loved it!!! I gave her some plain toast soldiers with it which she also really enjoyed! :-)

a big winner with my little one.....started to recently give it to her with rice.....gobbled it all up!!! Oh and grat tip that I can freeze left over coconut milk!

My 17 month old loved this dish when he was younger - it was one of his favourites - although the recipe i have printed off was made with rice previously. Anyway now he just won't eat it - i hate when that happens with something that they used to love and then they go right off it

my baby was getting bored with his usual meals so i tried this and he loved it. i added mashed potato and rice together so it was more like his usual meals in texture. i also addded more korma paste as he enjoys strong flavours :-)

I couldn't find mild curry paste in the store, so I used a pre-made korma sauce. Cooper loved the end result, but I would prefer to make my own curry paste over using ready-made ingredients. Can anyone come with suggestions?

Love this recipe - garunteed too please both my fussy 3 yr old and my hungry 1 yr old. Have also made it for my entire family including grandparents, aunts and uncles and variously aged kids and they all loved it.
